THE MENU:

First Course

Kumamoto Oyster – Blood orange mignonette, charred scallion, smoked birch salt

Salmon Gravlax – Pumpernickel, pickled shallot, dill crema, crispy caper

Paired with Spirit Works Distillery, Four Grain Straight Bourbon (Sonoma, CA)

Second Course

Braised Pork Belly – Crispy pork belly, pickled fennel, apple caramel
